　　特性與用途：白色或近白色自由流動(dòng)性的結(jié)晶性粉末。幾乎無臭。263~264℃熔化并分解。通常較穩(wěn)定，高濕度60%以下穩(wěn)定，60%以上則生成二水合物。與維生素C和維生素K3共存則易著色。堿性條件及直接與還原糖存在下加熱則分解。易溶于水（40g/ml,35℃），水溶液呈中性至微酸性，與磷酸、禁發(fā) 鹽酸、氫氧化鈉、離子交換樹脂等一起加熱，起外消旋作用。賴氨酸為必需氨基酸，無法在體內(nèi)合成，如缺乏則引起蛋白質(zhì)代謝障礙及功能障礙，導(dǎo)致生長障礙、發(fā)育不全、體重下降、食欲不振、血中蛋白減少等。D-型賴氨酸無生理效果。
